Dr Beak is based in Martinborough and our gin is small-batch distilled.

With environmentalism at our core, we aim to give back while producing premium quality gin, so you can feel good with every sip. A portion of profits is gifted to organisations who help protect our precious biodiversity.

We rely on selected growers from within New Zealand to provide us with exceptional raw ingredients. By using botanicals grown here in New Zealand, this helps us to keep our footprint small, and of course, supports the locals. Currently, all but one of our botanicals are grown here in NZ. This gives us traceability of our ingredients straight to your glass.

The Face behind the Beak

Dr Beak gin has been lovingly crafted and developed by Lacey, with support of her winemaker husband, Tim.

Lacey, a mother of three, and a Health Science graduate, has been asking herself for the last ten years, “What will I do when I grow up?”

She has always been passionate about making, creating, repurposing and growing. The idea to make gin was born whilst studying horticulture and came from the desire to look for a new challenge. Alongside that, came the realisation that she could grow or source all the botanicals here in New Zealand. Gin-making seemed to be the perfect bridge between science and craft. The seed was sown. This brave thinking has led to this exciting venture.

Juniper Shrubbery 

We have a number of Juniperus Communis plants from which we hope to harvest the berries (they’re actually seed cones) and use in our gin. We are hugely excited by this project, as this will be one of the first Juniper shrubberies in the country. Only time will tell what these beauties will deliver us, but our goal is to achieve a single site botanical gin, with 100% of all botanicals grown on our home block in Martinborough. Watch this space!
